GLOUCESTER – After Lulu Birds Kitchen closes for the night, new owner Dave Coleman will sit in one of the chairs in the 68-seat dining room.
However, it’s not to rest after a long day’s work.
“I sit in a new chair every day just to see what each guest is experiencing,” he said. “Food? I know I can handle that. But are they sitting in a chair that’s wobbly? Or is it too cold? Or is there a vent blowing on them? I know that might sound crazy.”
His staff often gives him odd glances as he’s examining everything long after the last patron has been fed. He’s used to it.
“I just want to make sure everything is perfect,” he said. “People are paying good money to be here for the experience, not just food. So, I’m a little nutty when it comes to that.”
